Timing: mid-October into early or mid-November for the canyon. That's later than Flagstaff and the San Francisco Peaks, which typically peak from late September, because they're 2,500 feet higher and cooler. If you're visiting in early October and want colour, drive up to the rim.

The three classic vantage points, with current status:
West Fork Trail (Call of the Canyon) — normally the fall hike, walking beneath arching maples. Closed right now under the Pocket Fire order, and separately affected by an Oak Creek flood closure. Check current status; if it reopens before the order expires on September 30, it should be available for the October colour.
Midgley Bridge Overlook — a roadside panorama down into the canyon, just north of Uptown on SR 89A. No hiking required.
Slide Rock State Park — cottonwood-lined creek, and the park is a separate Arizona State Parks fee area ($20 per vehicle October to April). Its Oak Creek swim area has been affected by the flood closure.
Oak Creek Vista, at the top of the switchbacks, is the reliable one: open, free, with restrooms and a long-running Native American vendor market, and it looks back down the whole canyon.
October crowds, honestly
October is busy. It is not, however, spring-break busy — the city's own shuttle expansion runs late February to late April, not in autumn, which tells you where peak demand actually sits.
Expect full trailhead lots by mid-morning, weekend traffic through the canyon on colour weekends, and lodging prices at the high end of their range. The mitigations are the usual ones and they work: start early, do popular trails on weekdays if you can, and remember that Cathedral Rock and Soldier Pass remain shuttle-only Thursday to Sunday all year, colour season included.
The compensation is that October is the one month where you can hike at 2pm and enjoy it.
